Law-uy (Utan bisaya) is a Filipino vegetarian dish in which the vegetables are boiled in water. This recipe originated from the Visayas region (Mindanao) in the Philippines, which is why some people called it Utan Bisaya. It is one of the easiest Filipino vegetable recipes since all you do is just boil the vegetables and season the soup.
Ingredients:
Vegetables: Important vegetables you need includes Spinach Leaves, Patola, Eggplant, Squash, Okra, Long Beans, and Spring Onion
Condiments & Herbs: To add the flavor to the soup, use the stalk of the lemongrass, ginger, red onion, and chicken bouillon cube.
• Slice a piece of eggplant (talong)
• Crush 2 thumbs of ginger (luya)
• Slice the okra
• Crush and tie the lemongrass (tanglad) into knots.
• Cube 2 cups of squash (kalabasa)
• Cut 1 ½ cups of string beans, with each piece at about 2 inches
Cooking Procedures:
Fill pot with water and throw in crushed ginger, onions, and shredded fish. Bring to a boil over medium high heat.
Lower heat and simmer for about 5 minutes.
Throw in the squash, green beans, and eggplant. Bring to a boil and simmer for another 5 minutes.
Add the tomatoes and okra and cook for about 2-3 minutes, just until limp.Season with fish sauce, salt, and pepper.
Turn off heat and add the spinach or malunggay. Stir to mix.
The residual heat will cook the leafy greens enough.
